Tex-Mex Hot Dog and Rice Casserole

Ingredients:
– 1 cup long grain white rice
– 1 can (10 oz) diced tomatoes with green chilies
– 1 can (10 oz) condensed cheddar cheese soup
– 1 cup water
– 1 cup frozen corn
– 1 can (15 oz) black beans, drained and rinsed
– 1 tsp chili powder
– 1/2 tsp cumin
– 4 hot dogs, sliced
– 1 cup shredded cheddar cheese
– Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
2. In a large bowl, combine rice, diced tomatoes, cheddar cheese soup, water, corn, black beans, chili powder, and cumin. Mix well.
3. Fold in hot dog slices and pour mixture into the prepared baking dish. Cover with foil and bake for 35 minutes.
