Southwestern Bacon and Bean Soup

Ingredients:
– 6 slices of bacon, chopped
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 can of black beans, drained and rinsed
– 1 can of diced tomatoes
– 4 cups of chicken broth
– 1 teaspoon of cumin
– 1 teaspoon of chili powder
– Salt and pepper to taste
– Optional toppings: shredded cheese, sour cream, cilantro
Instructions:
1. In a large pot, cook the bacon until crispy. Remove and set aside.
2. In the same pot, sauté the onion and garlic until softened.
3. Add the black beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.
4. Serve hot, topped with crispy bacon and your choice of toppings.
