Ingredients:
– 1 pound ground breakfast sausage
– 1 can (10.5 ounces) condensed cream of potato soup
– 1 cup milk
– 1 packet ranch seasoning mix
– 1 bag (30 ounces) frozen diced potatoes
– 1 1/2 cups shredded cheddar cheese
– Salt and pepper to taste
– Optional toppings: chopped green onions, diced tomatoes

Instructions:
1. Preheat your oven to 375°F and grease a 9×13 inch baking dish.
2. In a skillet, cook the ground sausage until browned and crumbled. Drain any excess grease.
3. In a large bowl, mix together the cream of potato soup, milk, and ranch seasoning mix.
4. Stir in the frozen diced potatoes, cooked sausage, and 1 cup of shredded cheddar cheese. Season with salt and pepper.
5. Pour the mixture into the prepared baking dish and top with the remaining 1/2 cup of cheddar cheese.
6. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
