Ingredients:

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Brown Butter Icing:

  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk

Instructions:

  • 1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • 2. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla extract until well combined.
  • 3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • 4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
