Pumpkin Cookies Recipe

Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the pumpkin puree, butter, and sugar until smooth. Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and spices. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
