  • 1 cup long-grain white rice
  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can diced tomatoes
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese

Instructions:

  • Preheat oven to 375°F.
  • In a large oven-safe skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add onion and red bell pepper to the skillet and cook until softened.
  • Stir in rice, black beans, corn, diced tomatoes, salsa, chicken broth, chili powder, cumin, salt, and pepper.
  • Bring mixture to a simmer, cover, and transfer to the preheated oven.
  • Bake for 20-25 minutes, or until rice is cooked through.
