Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • zest of 1 lemon
  • 1/2 cup fresh raspberries
  • 1/4 cup raspberry jam

Instructions:

  • 1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press onto the bottom of a 9-inch springform pan.
  • 2. In a separate bowl, mix cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla extract and lemon zest.
  • 3. Pour half of the cream cheese mixture onto the crust. Drop spoonfuls of raspberry jam on top and swirl with a knife. Add remaining batter and repeat with more jam and swirl.
  • 4. Bake for 55-60 minutes until center is almost set. Cool before refrigerating for at least 4 hours.
