Ingredients:
– 2 lbs. boneless, skinless chicken breast, cut into strips
– 1 onion, sliced
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 packet fajita seasoning mix
– 1 cup salsa
– 1 cup shredded cheddar cheese
– 1 cup sour cream
– 10 flour tortillas, cut into strips

Instructions:
1. Preheat the oven to 375°F.
2. In a large skillet, cook the chicken strips until done. Add the onion, and bell peppers, and cook until softened.
3. Stir in the fajita seasoning mix and salsa.
4. Layer half of the tortilla strips in the bottom of a greased casserole dish. Top with half of the chicken mixture and half of the cheese. Repeat the layers.
5. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes.
6. Serve with a dollop of sour cream on top.
