Ingredients:
– 1 lb. beef sirloin, thinly sliced
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 onion, sliced
– 1 packet fajita seasoning mix
– 1 cup shredded cheddar cheese
– 1/4 cup salsa
– 8 large flour tortillas

Instructions:
1. Preheat oven to 375°F.
2. In a large skillet, cook beef until browned. Add bell peppers, onion, and fajita seasoning mix.
3. Place half of the tortillas in a 9×13 inch baking dish. Spread beef mixture over tortillas. Top with cheese and remaining tortillas.
4. Bake for 25 minutes, or until cheese is melted and bubbly.
5. Serve hot with salsa on top.
