Luscious Lemon Raspberry Swirl Cheesecake

Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- zest of 1 lemon
- 1/2 cup fresh raspberries
- 1/4 cup raspberry jam
Instructions:
- 1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press onto the bottom of a 9-inch springform pan.
- 2. In a separate bowl, mix cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla extract and lemon zest.
- 3. Pour half of the cream cheese mixture onto the crust. Drop spoonfuls of raspberry jam on top and swirl with a knife. Add remaining batter and repeat with more jam and swirl.
